- ½ cup plain Greek yogurt (or sour cream)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan with butter or non-stick spray, or line it with parchment paper.
- In a medium bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
- In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy (about 3-4 minutes).
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and lemon juice.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Gently fold in the Greek yogurt until well combined.
- Fold in the blueberries gently. If using frozen blueberries, add them directly from the freezer.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 50-60 minutes, checking for doneness at the 50-minute mark with a toothpick.
- Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Once cooled, slice with a serrated knife.
- For a glaze, mix 1 cup of powdered sugar with 2 tablespoons of lemon juice until smooth and drizzle over the cooled bread.
- Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
