  • ½ cup plain Greek yogurt (or sour cream)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with butter or non-stick spray, or line it with parchment paper.
  3. In a medium bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream the softened butter and brown sugar together until light and fluffy (about 3-4 minutes).
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon zest, and lemon juice.
  6. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  7. Gently fold in the Greek yogurt until well combined.
  8. Fold in the blueberries gently. If using frozen blueberries, add them directly from the freezer.
  9. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

  11. Let the loaf cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
