  • 4 cups club soda or sparkling water

Instructions

  1. Macerate the Mint: In a large bowl, gently muddle the mint leaves with the sugar.
  2. Add Watermelon: Add the cubed watermelon to the bowl and gently mash with the mint mixture.
  3. Add Lime Juice: Pour in the lime juice and stir well to combine.
  4. Macerate: Cover the bowl and refrigerate for at least 30 minutes (or up to 1 hour) to allow flavors to meld.
  5. Blend: Transfer the watermelon mixture to a blender and blend until completely smooth.
  6. Strain: Place a fine-mesh sieve over a pitcher or bowl. Pour the blended mixture through the sieve, pressing down on the solids to extract as much liquid as possible. Discard the solids.
  7. Prepare Glasses: Fill each glass with ice cubes.
  8. Add Rum (Optional): If using, pour 1/4 cup of white rum into each glass.
  9. Pour Watermelon Mixture: Pour the strained watermelon mixture into each glass, filling it about halfway.
  10. Top with Club Soda: Top off each glass with club soda or sparkling water.
  11. Stir Gently: Gently stir each mojito to combine.
