A refreshing summer Watermelon Mint Mojito! This easy cocktail (or mocktail) blends sweet watermelon, fresh mint, and zesty lime for a delicious, hydrating treat.

- 6 cups cubed seedless watermelon, plus extra for garnish
- 1/2 cup fresh mint leaves, plus extra sprigs for garnish
- 1/4 cup fresh lime juice (from about 2–3 limes)
- 2 tablespoons granulated sugar (or more to taste)
- 1 cup white rum (optional, for an alcoholic version)
- 4 cups club soda or sparkling water
- Ice cubes
Instructions
- Macerate the Mint: In a large bowl, gently muddle the mint leaves with the sugar.
- Add Watermelon: Add the cubed watermelon to the bowl and gently mash with the mint mixture.
- Add Lime Juice: Pour in the lime juice and stir well to combine.
- Macerate: Cover the bowl and refrigerate for at least 30 minutes (or up to 1 hour) to allow flavors to meld.
- Blend: Transfer the watermelon mixture to a blender and blend until completely smooth.
- Strain: Place a fine-mesh sieve over a pitcher or bowl. Pour the blended mixture through the sieve, pressing down on the solids to extract as much liquid as possible. Discard the solids.
- Prepare Glasses: Fill each glass with ice cubes.
- Add Rum (Optional): If using, pour 1/4 cup of white rum into each glass.
- Pour Watermelon Mixture: Pour the strained watermelon mixture into each glass, filling it about halfway.
- Top with Club Soda: Top off each glass with club soda or sparkling water.
- Stir Gently: Gently stir each mojito to combine.
- Garnish: Garnish with a sprig of fresh mint and a watermelon wedge.
- Adjust Sweetness: Taste and add more sugar or simple syrup if needed.
- Serve: Serve immediately and enjoy!

- Muddling: Gently crush the mint to release its oils, but don’t bruise it.
