  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup unsalted butter, softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup chopped green onions (optional, for garnish)
  • 1/4 cup crumbled bacon (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the russet potatoes thoroughly under cold water and pat them dry.
  3. Poke several holes in each potato with a fork to allow steam to escape.
  4. Rub each potato with olive oil and sprinkle with salt.
  5. Place the potatoes directly on the oven rack or on a baking sheet lined with aluminum foil. Bake for 45-60 minutes, or until tender when pierced with a fork.
  6. Once baked, remove the potatoes from the oven and let them cool for 10-15 minutes.
  7. Cut each potato in half lengthwise and scoop out the insides, leaving about 1/4 inch of potato on the skin.
  8. In a mixing bowl, combine the scooped-out potato flesh with softened butter, sour cream, milk, garlic powder, onion powder, and a pinch of salt and pepper. Mash until smooth and creamy.
  9. Stir in the shredded cheddar cheese, reserving some for topping.
  10. Preheat your oven to 375°F (190°C) for the second baking.
  11. Spoon the potato mixture back into the potato skins, mounding it slightly on top.
  12. Sprinkle the reserved cheddar cheese over the tops of each potato.
  13. If using, sprinkle crumbled bacon on top of the cheese.
  14. Place the filled potatoes on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  15. Let the twice-baked potatoes cool for a few minutes before serving.
  16. Optionally, sprinkle chopped green onions on top for garnish.
