  • 1/2 teaspoon of citric acid (optional, for extra tartness)
  • 1/4 cup of water (for dissolving sugar)

Instructions

  1. Wash the lemons under running water to remove any dirt or wax.
  2. Roll each lemon on the countertop with your palm to help release the juices.
  3. Cut the lemons in half and use a citrus juicer or a reamer to extract the juice. Strain the juice to remove any seeds and pulp to yield about 1 cup of fresh lemon juice.
  4. In a small saucepan, combine the fresh lemon juice, sugar, lemon zest, and salt. If using citric acid, add it now.
  5. Place the saucepan over medium heat and stir until the sugar is completely dissolved (about 3-5 minutes). Avoid boiling.
  6. Remove from heat and let the mixture cool for about 10 minutes.
  7. Using a dehydrator, line the dehydrator trays with parchment paper.
  8. Pour the cooled lemon mixture onto the trays, spreading it out evenly to about 1/8 inch thick.
  9. Set the dehydrator to 135°F (57°C) and let it run for about 8-10 hours, checking periodically until completely dry and brittle.
  10. Alternatively, preheat your oven to the lowest setting (around 150°F or 65°C).
  11. Line a baking sheet with parchment paper and pour the cooled lemon mixture onto it, spreading it out evenly.
  12. Place the baking sheet in the oven with the door slightly ajar to allow moisture to escape. This will take about 4-6 hours; monitor to prevent burning.
  13. Break the dried lemon mixture into smaller pieces for easier grinding.
  14. Using a spice grinder or high-speed blender, pulse the dried pieces until you achieve a fine powder. This may take a few minutes.
  15. Sift the powder through a fine mesh strainer to remove larger pieces, re-grinding them if desired.
  16. Transfer the lemon powder into an airtight container (glass jars work well).
  17. Store in a cool, dark place away from direct sunlight to preserve flavor and color.
