Instructions
- Crack the 4 large eggs into a medium-sized mixing bowl and whisk vigorously until yolks and whites are fully combined. Season with salt and pepper to taste.
- If using, chop the chives finely and add them to the egg mixture.
- Heat a non-stick skillet over medium heat. Pour in the egg mixture and let it sit for a few seconds to start setting at the edges.
- Gently stir the eggs with a spatula, pushing them from the edges toward the center. Continue stirring occasionally until the eggs are mostly cooked but still slightly runny (about 3-4 minutes).
- Remove the skillet from heat; the residual heat will finish cooking the eggs.
- While the eggs are cooking, toast the slices of bread until golden brown. If using a skillet, add a little butter for extra flavor.
- If adding cheese, place a slice on one piece of the toasted bread while its still hot to allow it to melt slightly.
- Assemble the sandwich by starting with the slice of bread with melted cheese. Spoon the creamy scrambled eggs onto it, piling high.
- If using, add a handful of fresh greens on top of the eggs. Drizzle with hot sauce if desired.
- Place the second slice of bread on top to complete the sandwich.
- Cut the sandwich in half diagonally for a neat presentation and serve immediately while warm.
