Ingredients

  • 2 ounces white crème de cacao
  • 1 ounce strawberry puree (from above)
  • 1 ounce heavy cream
  • ½ ounce simple syrup (adjust to taste)
  • Ice cubes
  • Fresh strawberries, sliced
  • Whipped cream
  • Strawberry sugar (for rimming the glass)

Instructions

  1. Wash and hull the strawberries.
  2. Combine hulled strawberries, sugar, and lemon juice in a blender or food processor.
  3. Blend until smooth.
  4. (Optional) Strain through a fine-mesh sieve for an extra smooth puree.
  5. Chill in an airtight container for at least 30 minutes.
  6. Dehydrate fresh strawberries or use freeze-dried strawberries.
  7. Grind the dried strawberries into a fine powder.
  8. Combine strawberry powder with granulated sugar (1 part powder to 3 parts sugar, adjust to taste).
  9. Mix well and store in an airtight container.
  10. Chill a martini glass in the freezer for at least 15 minutes.
  11. (Optional) Moisten the rim of the glass with lemon or simple syrup and dip into strawberry sugar.
  12. Fill a cocktail shaker with ice.
  13. Add vodka, crème de cacao, strawberry puree, heavy cream, and simple syrup to the shaker.
  14. Shake vigorously for 15-20 seconds.
  15. Strain into the prepared martini glass.
  16. Garnish with a fresh strawberry slice or whipped cream.
  17. Serve immediately.
