  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1 tablespoon lime juice
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • Optional: sliced jalapeños, avocado, or hot sauce for serving

Instructions

  1. Rinse the chicken breasts under cold water and pat them dry with paper towels.
  2. Cut the chicken breasts into bite-sized pieces, about 1-inch cubes.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  4. Add the minced garlic and sauté for an additional 1 minute, stirring frequently.
  5. Add the chicken pieces to the skillet, seasoning with cumin, chili powder, smoked paprika, salt, and black pepper. Stir to coat the chicken evenly.
  6. Cook the chicken for about 5-7 minutes, stirring occasionally, until browned and cooked through.
  7. Pour in the chicken broth and bring to a simmer.
  8. Reduce heat to low, cover the skillet, and let simmer for about 10-15 minutes.
  9. Remove the lid and stir in the lime juice. Adjust seasoning if necessary.
  10. While the chicken simmers, warm the tortillas in a dry skillet or microwave until pliable.
  11. Keep the warmed tortillas covered with a kitchen towel.
  12. Take a warm tortilla and place a spoonful of the chicken mixture in the center.
  13. Top with shredded lettuce, diced tomatoes, and shredded cheese.
  14. Add a dollop of sour cream and sprinkle with fresh cilantro. Add jalapeños or hot sauce if desired.
  15. Repeat the assembly for the remaining tortillas and chicken mixture.
  16. Serve the assembled tacos immediately while warm, either on a platter for sharing or individually on plates.
