- 1/4 teaspoon black pepper
- 1 cup chicken broth
- 1 tablespoon lime juice
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 1/4 cup fresh cilantro, chopped
- Optional: sliced jalapeños, avocado, or hot sauce for serving
Instructions
- Rinse the chicken breasts under cold water and pat them dry with paper towels.
- Cut the chicken breasts into bite-sized pieces, about 1-inch cubes.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and sauté for an additional 1 minute, stirring frequently.
- Add the chicken pieces to the skillet, seasoning with cumin, chili powder, smoked paprika, salt, and black pepper. Stir to coat the chicken evenly.
- Cook the chicken for about 5-7 minutes, stirring occasionally, until browned and cooked through.
- Pour in the chicken broth and bring to a simmer.
- Reduce heat to low, cover the skillet, and let simmer for about 10-15 minutes.
- Remove the lid and stir in the lime juice. Adjust seasoning if necessary.
- While the chicken simmers, warm the tortillas in a dry skillet or microwave until pliable.
- Keep the warmed tortillas covered with a kitchen towel.
- Take a warm tortilla and place a spoonful of the chicken mixture in the center.
- Top with shredded lettuce, diced tomatoes, and shredded cheese.
- Add a dollop of sour cream and sprinkle with fresh cilantro. Add jalapeños or hot sauce if desired.
- Repeat the assembly for the remaining tortillas and chicken mixture.
- Serve the assembled tacos immediately while warm, either on a platter for sharing or individually on plates.
