Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 pound baby potatoes, halved
  • 2 ears of corn, cut into thirds
  • 1/2 pound smoked sausage, sliced
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon Old Bay seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, sliced
  • Fresh parsley, chopped (for garnish)
  • Aluminum foil (heavy-duty recommended)

Instructions

  1. Rinse the shrimp under cold water. Peel and devein if not already done. Optionally, leave tails on for presentation.
  2. Wash and halve the baby potatoes for even cooking. Quarter larger potatoes if using.
  3. Cut the ears of corn into thirds for easy handling in the packets.
  4. Cut the smoked sausage into bite-sized pieces for flavor.
  5. Melt the butter and mix in minced garlic, Old Bay seasoning, paprika, salt, and black pepper.
  6. Tear off four large pieces of aluminum foil, about 12 inches long.
  7. Place halved baby potatoes in the center of each foil piece.
  8. Layer corn pieces and sliced sausage on top of the potatoes.
  9. Distribute shrimp evenly over the sausage and corn.
  10. Spoon the melted butter mixture over the ingredients in each packet.
  11. Place lemon slices on top of each packet.
  12. Fold the foil over the ingredients and seal tightly.
  13. Preheat grill to medium-high heat (about 400°F) or oven to 400°F.
  14. Place packets on grill grates or a baking sheet. Cook for 15-20 minutes.
  15. Open one packet after 15 minutes to check if shrimp are pink and potatoes are tender. Reseal and cook for an additional 5 minutes if needed.
  16. Remove packets from heat and let sit for a minute before opening.
  17. Sprinkle with freshly chopped parsley.
  18. Serve directly in foil packets or transfer to a serving platter. Squeeze extra lemon juice over the top.
  19. Share with family and friends for a delightful meal!
