  • Total Time: 45 minutes
  • Yield: 2 cups 1x

Description

Quick and easy savory yogurt dip with cucumber, red onion, dill, and a hint of lemon. Perfect as a snack, appetizer, or sauce!

Ingredients

Scale
  • 1 cup plain Greek yogurt (full-fat or low-fat, your preference!)
  • 1/4 cup finely diced cucumber
  • 1/4 cup finely diced red onion
  • 1/4 cup finely chopped fresh dill
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice (freshly squeezed is best!)
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper to taste
  • Optional: Pinch of red pepper flakes for a little heat
  • Optional: 1 tablespoon chopped fresh mint
  • Optional: 1/4 cup crumbled feta cheese
  • Optional: Drizzle of extra virgin olive oil for serving
  • Optional: Pita bread or vegetables for dipping

Instructions

  1. Prep the Cucumber: Dice the cucumber into small, even pieces. Peel if desired.
  2. Dice the Red Onion: Dice the red onion finely. Soak in cold water for 10 minutes to mellow the flavor if desired.
  3. Chop the Dill: Chop the fresh dill finely. Chop mint if using.
  4. Mince the Garlic: Mince the garlic clove.
  5. Combine in a Bowl: In a medium-sized bowl, add the Greek yogurt, diced cucumber, diced red onion, chopped dill (and mint, if using), minced garlic, olive oil, and lemon juice.
  6. Season Generously: Season with salt and freshly ground black pepper to taste. Add red pepper flakes if desired.
  7. Mix Well: Stir until well combined.
  8. Chill for at Least 30 Minutes: Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  9. Taste and Adjust: Before serving, taste and adjust seasoning as needed.
  10. Serve and Enjoy: Transfer to a serving bowl. Top with feta cheese and drizzle with olive oil if desired. Serve with pita bread or vegetables for dipping.

Notes

  • For a richer flavor, use full-fat Greek yogurt.
  • Adjust the amount of garlic to your preference.
  • Soaking the diced red onion in cold water for 10 minutes will mellow out the flavor.
  • This dip can be made up to 24 hours in advance. The flavors will meld together and improve over time.
  • Store leftover savory yogurt in an airtight container in the refrigerator for up to 3 days.
