Ingredients

Scale
  • 2 cups fresh raspberries
  • 2 cups fresh peaches, peeled and sliced
  • 1 cup granulated sugar, divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the fresh raspberries and sliced peaches.
  3. Add 1/2 cup of granulated sugar to the fruit mixture.
  4. Pour in the lemon juice and vanilla extract.
  5. Gently toss the fruit with the sugar, lemon juice, and vanilla until well combined, being careful not to mash the raspberries.
  6. Set the fruit mixture aside to let the flavors meld.
  7. In a separate mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, ground cinnamon, and salt.
  8. Whisk the dry ingredients together until well mixed.
  9. Pour in the melted unsalted butter.
  10. Mix the butter into the dry ingredients using a fork or your fingers until the mixture resembles coarse crumbs.
  11. Lightly grease a 9×13-inch baking dish with cooking spray or butter.
  12. Pour the fruit mixture into the prepared baking dish, spreading it out evenly.
  13. Sprinkle the crumble topping evenly over the fruit layer.
  14. Gently press the topping down with your hands.
  15. Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.
  16. If the topping browns too quickly, cover it loosely with aluminum foil.
  17. Once done, remove from the oven and let it cool for 10-15 minutes.
  18. Scoop generous portions into bowls and serve warm or at room temperature.
  19. For an extra special touch, top with vanilla ice cream or whipped cream.
  20. Enjoy your homemade raspberry peach crumble!
