- 2 cups fresh peaches, peeled and sliced
- 1 cup granulated sugar, divided

- 1 cup rolled oats
- 1/2 cup brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted

- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the fresh raspberries and sliced peaches.
- Add 1/2 cup of granulated sugar to the fruit mixture.
- Pour in the lemon juice and vanilla extract.
- Gently toss the fruit with the sugar, lemon juice, and vanilla until well combined, being careful not to mash the raspberries.
- Set the fruit mixture aside to let the flavors meld.
- In a separate mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, ground cinnamon, and salt.
- Whisk the dry ingredients together until well mixed.
- Pour in the melted unsalted butter.
- Mix the butter into the dry ingredients using a fork or your fingers until the mixture resembles coarse crumbs.
- Lightly grease a 9×13-inch baking dish with cooking spray or butter.
- Pour the fruit mixture into the prepared baking dish, spreading it out evenly.
- Sprinkle the crumble topping evenly over the fruit layer.
- Gently press the topping down with your hands.
- Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.
- If the topping browns too quickly, cover it loosely with aluminum foil.
