  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • Whipped cream (optional)
  • Ground cinnamon for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, sugar, and salt. Whisk until well mixed.
  3. Add the softened butter to the dry ingredients. Mix until it resembles coarse crumbs.
  4. In a small bowl, whisk together the egg yolk and vanilla extract. Pour into the flour mixture and stir until the dough comes together. Add cold water if needed.
  5. Press the dough into the bottom of a greased 9×13 inch baking dish, spreading it evenly.
  6. Prick the crust with a fork to prevent puffing.
  7. Bake for about 15 minutes, or until lightly golden.
  8. In a large mixing bowl, combine the pumpkin puree, sweetened condensed milk, and eggs.
  9. Add the spices and salt, mixing until smooth and well combined.
  10. Stir in the vanilla extract.
  11. Once the crust is baked, let it cool for about 5 minutes.
  12. Pour the pumpkin filling over the crust, spreading it evenly.
  13. Return to the oven and bake for an additional 25-30 minutes, or until set.
  14. Remove from the oven and let cool in the baking dish on a wire rack for at least 1 hour.
  15. Cover with plastic wrap and refrigerate for at least 2 hours, or overnight.
