  • 1 cup corn syrup
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips (optional)
  • Whipped cream for serving (optional)

Instructions

  1. In a large mixing bowl, combine the granulated sugar and brown sugar. Whisk until well combined.
  2. Add the corn syrup to the sugar mixture and stir until the sugars are fully dissolved.
  3. Mix in the melted butter until well incorporated.
  4. Crack the eggs into a separate bowl, then add them one at a time to the mixture, whisking well after each addition.
  5. Stir in the vanilla extract and salt.
  6. Fold in the chopped pecans and mini marshmallows. Optionally, add chocolate chips.
  7. Preheat your oven to 350°F (175°C).
  8. If making a homemade crust, combine flour, salt, and cold butter in a bowl. Mix until it resembles coarse crumbs.
  9. Add ice water, one tablespoon at a time, until the dough comes together. Roll out and fit into a 9-inch pie pan.
