- 1 pre-baked pie crust (9-inch)
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 cup corn syrup
- 1/2 cup unsalted butter, melted
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup chopped pecans
- 1 cup mini marshmallows
- 1/2 cup chocolate chips (optional)
- Whipped cream for serving (optional)
Instructions
- In a large mixing bowl, combine the granulated sugar and brown sugar. Whisk until well combined.
- Add the corn syrup to the sugar mixture and stir until the sugars are fully dissolved.
- Mix in the melted butter until well incorporated.
- Crack the eggs into a separate bowl, then add them one at a time to the mixture, whisking well after each addition.
- Stir in the vanilla extract and salt.
- Fold in the chopped pecans and mini marshmallows. Optionally, add chocolate chips.
- Preheat your oven to 350°F (175°C).
- If making a homemade crust, combine flour, salt, and cold butter in a bowl. Mix until it resembles coarse crumbs.
- Add ice water, one tablespoon at a time, until the dough comes together. Roll out and fit into a 9-inch pie pan.
- Prick the bottom of the crust with a fork and bake for 10-12 minutes until lightly golden. Let cool slightly.
- Pour the filling into the pre-baked pie crust and smooth the top.
- Bake for 45-50 minutes until the filling is set but slightly jiggly in the center.
- Let the pie cool on a wire rack for at least 2 hours before serving.
- Slice and serve with whipped cream if desired.
