  • Author: Dottie
  • Total Time: 50 minutes
  • Yield: 4-6 glasses 1x

Description

This Pink Lemonade Cocktail is a refreshing blend of fresh lemon juice and cranberry juice, topped with fizzy club soda. Perfect for summer gatherings, it’s visually appealing and deliciously tart, making it an ideal choice for any occasion.

Ingredients

Scale
  • 1 cup fresh lemon juice (about 46 lemons)
  • 1 cup granulated sugar
  • 4 cups cold water
  • 1 cup cranberry juice
  • 1 cup club soda
  • Ice cubes
  • Fresh lemon slices (for garnish)
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. Gather all ingredients, ensuring the lemons are ripe and juicy. Roll them on the counter to release more juice.
  2. Cut the lemons in half and juice them using a citrus juicer, aiming for about 1 cup of fresh lemon juice. Strain out any seeds.
  3. In a medium saucepan, combine the lemon juice and 1 cup of granulated sugar. Stir over medium heat until the sugar dissolves (about 2-3 minutes). Do not boil.
  4. Remove from heat and let cool for a few minutes.
  5. Add 4 cups of cold water to the lemon-sugar mixture and stir well to combine.
  6. Pour in 1 cup of cranberry juice into the lemonade mixture for color and tartness.
  7. Stir gently to combine and adjust the cranberry juice for desired color.
  8. Taste the mixture and adjust sweetness with more sugar or water if needed.
  9. Transfer the lemonade to a large pitcher and refrigerate for at least 30 minutes.
  10. Prepare serving glasses by filling them halfway with ice cubes.
  11. Once chilled, pour the lemonade into each glass, filling them about three-quarters full.
  12. Add a splash of club soda to each glass (about 1/4 cup) for fizz.
  13. Gently stir to combine without losing too much fizz.
  14. Slice a fresh lemon into thin rounds and place a slice on the rim of each glass.
  15. Add fresh mint leaves to each glass for garnish, if desired.

Notes

  • Adjust the sweetness and tartness to your preference by modifying the amount of sugar or cranberry juice.
  • For a fun twist, consider adding other fruit juices or flavored syrups.
