Pecan Pie Cobbler: The Ultimate Guide to Baking Perfection

  • Total Time: 65 minutes
  • Yield: 12 servings 1x

Description

Warm, comforting pecan pie cobbler with gooey pecan filling and biscuit topping. Perfect with ice cream or whipped cream!

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 4 large eggs, lightly beaten
  • 3 cups pecan halves or pieces
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 3/4 cup milk
  • 6 tablespoons (3/4 stick) unsalted butter, melted

Instructions

  1. Melt the butter in a large bowl.
  2. Add granulated sugar and light brown sugar to the melted butter. Whisk until well combined.
  3. Pour in the light corn syrup and whisk until everything is nicely incorporated.
  4. Stir in the vanilla extract and salt.
  5. Lightly beat the eggs in a separate bowl. Slowly drizzle the beaten eggs into the butter and sugar mixture while whisking constantly.
  6. Gently fold in the pecan halves or pieces.
  7. In a medium bowl, whisk together the flour, baking powder, salt, and sugar.
  8. Pour in the milk and stir until just combined. Be careful not to overmix the batter. A few lumps are perfectly fine.
  9. Gently stir in the melted butter until just combined. Again, avoid overmixing.
  10. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  11. Pour the pecan pie filling into the prepared baking dish, spreading it evenly.
  12. Drop spoonfuls of the cobbler topping evenly over the pecan pie filling.
  13. Bake in the preheated oven for 45-55 minutes, or until the topping is golden brown and the filling is bubbly.
  14. Let the cobbler cool slightly before serving.

Notes

  • Use high-quality ingredients for the best flavor.
  • Don’t overmix the cobbler topping.
  • Adjust baking time as needed based on your oven.
  • Let the cobbler cool slightly before serving to allow the filling to set.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Serve with vanilla ice cream, whipped cream, caramel sauce, or chopped pecans.
  • For a Chocolate Pecan Pie Cobbler, add 1/2 cup of cocoa powder to the pecan pie filling.
  • For a Bourbon Pecan Pie Cobbler, add 2 tablespoons of bourbon to the pecan pie filling.
