- Mint leaves for garnish (optional)
Instructions
- Rinse the pearl sago under cold running water to remove excess starch.
- In a medium-sized pot, bring 4 cups of water to a rolling boil over high heat.
- Add the rinsed sago pearls to the boiling water, stirring gently to prevent sticking.
- Reduce heat to medium and cook for 10-15 minutes until the pearls turn translucent, stirring occasionally.
- Check for doneness; the pearls should be completely translucent and soft. If not, cook a few more minutes.
- Remove from heat and let sit for 5 minutes to absorb remaining water.
- Drain the sago in a fine-mesh sieve and rinse under cold water. Set aside.
- In a separate saucepan, pour in the coconut milk and turn the heat to medium-low.
- Add sugar and salt, stirring until the sugar dissolves (about 2-3 minutes).
- Optionally, add vanilla extract and stir to combine.
- Heat gently without boiling until warm and creamy.
- Add the cooked sago pearls to the coconut milk mixture and simmer on low heat for about 5 minutes.
- Remove from heat and let cool slightly. Serve warm or chill in the refrigerator for 1-2 hours.
- Scoop the sago coconut mixture into individual serving bowls or cups.
- Top with fresh fruit of your choice, such as mango, banana, or jackfruit.
- Garnish with mint leaves if desired.
