  • Fresh fruit (like mango, banana, or jackfruit) for topping
  • Mint leaves for garnish (optional)

Instructions

  1. Rinse the pearl sago under cold running water to remove excess starch.
  2. In a medium-sized pot, bring 4 cups of water to a rolling boil over high heat.
  3. Add the rinsed sago pearls to the boiling water, stirring gently to prevent sticking.
  4. Reduce heat to medium and cook for 10-15 minutes until the pearls turn translucent, stirring occasionally.
  5. Check for doneness; the pearls should be completely translucent and soft. If not, cook a few more minutes.
  6. Remove from heat and let sit for 5 minutes to absorb remaining water.
  7. Drain the sago in a fine-mesh sieve and rinse under cold water. Set aside.
  8. In a separate saucepan, pour in the coconut milk and turn the heat to medium-low.
  9. Add sugar and salt, stirring until the sugar dissolves (about 2-3 minutes).
  10. Optionally, add vanilla extract and stir to combine.
  11. Heat gently without boiling until warm and creamy.
  12. Add the cooked sago pearls to the coconut milk mixture and simmer on low heat for about 5 minutes.
  13. Remove from heat and let cool slightly. Serve warm or chill in the refrigerator for 1-2 hours.
  14. Scoop the sago coconut mixture into individual serving bowls or cups.
