- 2 ripe bananas
- 1 cup creamy peanut butter
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1/2 cup crushed graham crackers (optional, for layering)
- Chopped peanuts (for garnish, optional)
Instructions
- Peel the ripe bananas and place them in a medium-sized mixing bowl. Mash with a fork until smooth but still slightly chunky. Set aside.
- In a large saucepan, whisk together granulated sugar, cornstarch, and salt.
- Gradually pour in the whole milk while whisking to create a smooth mixture.
- Place the saucepan over medium heat, whisking constantly until the mixture thickens and bubbles, about 5-7 minutes. Remove from heat.
- Stir in the peanut butter and vanilla extract until smooth.
- Gently fold in the mashed bananas.
- Transfer to a bowl or individual cups, cover with plastic wrap, and let cool for 15 minutes. Refrigerate for at least 2 hours to set.
- Place mixing bowl and beaters in the freezer for 10-15 minutes.
- Pour heavy whipping cream into the chilled bowl and beat on medium speed until it thickens.
- Gradually add powdered sugar and whip on high until stiff peaks form.
- Spoon a layer of pudding into the bottom of each cup.
- Sprinkle crushed graham crackers over the pudding.
- Spoon another layer of pudding over the graham crackers.
- Generously dollop whipped cream on top.
- Sprinkle chopped peanuts on top for added crunch.
- Refrigerate assembled cups for at least 30 minutes before serving.

- For a decorative touch, add banana slices on top of the whipped cream before serving.
