  • 12 ounces semi-sweet chocolate chips
  • 1 tablespoon vegetable shortening (or coconut oil)

Instructions

  1. Cream the Butter and Peanut Butter: In a large mixing bowl, combine the softened butter and peanut butter. Beat with an electric mixer on medium speed until light and fluffy (2-3 minutes). Scrape down the sides of the bowl as needed.
  2. Add the Powdered Sugar: Gradually add the powdered sugar, one cup at a time, to the butter and peanut butter mixture. Beat on low speed until fully incorporated. Scrape down the sides of the bowl as needed.
  3. Incorporate the Graham Cracker Crumbs: Add the graham cracker crumbs and beat on low speed until evenly distributed.
  4. Add Vanilla and Salt: Stir in the vanilla extract and salt until just combined.
  5. Chill the Dough: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to firm up the dough.
  6. Roll into Balls: Scoop out portions of the chilled dough and roll them into 1-inch balls. Place the rolled balls on a baking sheet lined with parchment paper or a silicone baking mat.
  7. Refrigerate Again: Return the baking sheet to the refrigerator and chill for another 30 minutes.
  8. Melt the Chocolate: In a heat-safe bowl set over a saucepan of simmering water (double boiler), combine the chocolate chips and vegetable shortening (or coconut oil). Stir constantly until the chocolate is completely melted and smooth. Alternatively, melt in the microwave in 30-second intervals, stirring in between.
  9. Dipping the Peanut Butter Balls: Remove the peanut butter balls from the refrigerator. Using a fork or dipping tools, carefully dip each ball into the melted chocolate, ensuring that it is completely coated. Gently tap off any excess chocolate. Place the dipped peanut butter balls back on the parchment-lined baking sheet.
  10. Optional: Sprinkle with Toppings: If desired, sprinkle the dipped peanut butter balls with toppings such as sprinkles, chopped nuts, or sea salt while the chocolate is still wet.
