- 1 cup unsalted butter, softened
- 1/2 cup icing sugar (powdered sugar)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup cornflour (cornstarch)
- 1/4 teaspoon salt
- 1/2 cup passionfruit pulp (fresh or canned)
- 1 cup icing sugar (for filling)
- Extra passionfruit pulp for drizzling (optional)
Instructions
- In a large mixing bowl, cream together the softened butter and 1/2 cup of icing sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
- Add the vanilla extract and mix until well combined.
- In a separate bowl, sift together the all-purpose flour, cornflour, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined. Avoid overmixing.
- Gently fold in the passionfruit pulp using a spatula.
- Shape the dough into a disc and wrap it in plastic wrap.
- Chill in the refrigerator for at least 30 minutes.
- Preheat the oven to 160°C (320°F) and line two baking sheets with parchment paper.
- Portion out the chilled dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheets, leaving space between each.
- Flatten each cookie ball to about 1/2 inch thick.
- Bake for 15-18 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
- While the cookies cool, sift 1 cup of icing sugar into a medium bowl.
- Add the remaining passionfruit pulp and mix until smooth. Adjust consistency with more pulp if needed.
- Once the cookies are cool, spread a generous amount of the passionfruit filling on the flat side of one cookie.
- Top with another cookie to create a sandwich.

- For an extra touch, drizzle additional passionfruit pulp over the assembled cookies before serving.
