  • 1/2 cup icing sugar (powdered sugar)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cornflour (cornstarch)
  • 1/4 teaspoon salt
  • 1/2 cup passionfruit pulp (fresh or canned)
  • 1 cup icing sugar (for filling)
  • Extra passionfruit pulp for drizzling (optional)

Instructions

  1. In a large mixing bowl, cream together the softened butter and 1/2 cup of icing sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
  2. Add the vanilla extract and mix until well combined.
  3. In a separate bowl, sift together the all-purpose flour, cornflour, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing on low speed until just combined. Avoid overmixing.
  5. Gently fold in the passionfruit pulp using a spatula.
  6. Shape the dough into a disc and wrap it in plastic wrap.
  7. Chill in the refrigerator for at least 30 minutes.
  8. Preheat the oven to 160°C (320°F) and line two baking sheets with parchment paper.
  9. Portion out the chilled dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheets, leaving space between each.
  10. Flatten each cookie ball to about 1/2 inch thick.
  11. Bake for 15-18 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
  12. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  13. While the cookies cool, sift 1 cup of icing sugar into a medium bowl.
  14. Add the remaining passionfruit pulp and mix until smooth. Adjust consistency with more pulp if needed.
  15. Once the cookies are cool, spread a generous amount of the passionfruit filling on the flat side of one cookie.
  16. Top with another cookie to create a sandwich.
