  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/2 cup orange juice (freshly squeezed is best)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds (for garnish)
  • Cooked rice or noodles (for serving)

Instructions

  1. Place the bite-sized chicken pieces in a bowl. Sprinkle the cornstarch over the chicken and toss to coat evenly. Let the chicken sit for about 10-15 minutes.
  2. In a separate bowl, combine the orange juice, soy sauce, honey, rice vinegar, and sesame oil. Whisk until well blended. Taste and adjust sweetness or saltiness as needed.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces in a single layer and cook for about 4-5 minutes, turning occasionally, until golden brown and cooked through. Remove the chicken and set aside.
  4. In the same skillet, add the remaining tablespoon of vegetable oil. Heat over medium-high heat. Add minced garlic and ginger, sauté for about 30 seconds until fragrant.
  5. Add the sliced bell peppers, broccoli florets, and snap peas. Stir-fry for about 3-4 minutes until tender-crisp.
  6. Return the chicken to the skillet and pour the orange sauce over the chicken and vegetables. Stir to coat evenly.
  7. Cook for an additional 2-3 minutes, stirring occasionally, until the sauce thickens. For a thicker sauce, mix an additional teaspoon of cornstarch with a tablespoon of water and add to the skillet.
  8. Remove from heat and stir in chopped green onions. Serve over cooked rice or noodles and garnish with sesame seeds.
