Instructions

  1. In a medium-sized saucepan, combine the granulated sugar, unsweetened cocoa powder, and a pinch of salt. Stir until well mixed.
  2. Pour in the whole milk and add the unsalted butter. Place the saucepan over medium heat, stirring continuously until the mixture is smooth.
  3. Once it starts to bubble, stop stirring and let it boil for about 5 minutes until it reaches the soft-ball stage (234°F or 112°C). You can test this by dropping a small amount into cold water; it should form a soft ball.
  4. Remove the saucepan from heat and let it cool for about 10 minutes without stirring.
  5. Add the vanilla extract and fold in the chopped nuts if using.
  6. Beat the mixture vigorously with a wooden spoon or hand mixer for about 5-10 minutes until it thickens and loses its gloss.
  7. Prepare an 8×8 inch square baking dish by lining it with parchment paper or greasing it lightly.
  8. Pour the fudge mixture into the prepared dish and spread it evenly with a spatula.
  9. Let it sit at room temperature for about 2 hours to set, or refrigerate to speed up the process.
  10. Once set, cut the fudge into squares or rectangles as desired.
  11. Store in an airtight container at room temperature for up to two weeks, or refrigerate for longer storage.
