  • 1/2 cup breadcrumbs (preferably whole wheat)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons olive oil (for cooking)
  • 1/2 cup diced tomatoes (fresh or canned)
  • 1/4 cup diced red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup tzatziki sauce (for serving)
  • Fresh lemon wedges (for serving)

Instructions

  1. In a large mixing bowl, combine the ground chicken, breadcrumbs, and grated Parmesan cheese.
  2. Add the finely chopped parsley, minced garlic, dried oregano, ground cumin, salt, and black pepper to the bowl.
  3. Crack the large egg into the mixture and mix all the ingredients together until well combined, being careful not to overmix.
  4. Take a portion of the mixture (about 1/4 cup) and form it into a patty shape, about 1/2 inch thick. Aim to make around 8 patties.
  5. Place the shaped patties on a plate or a baking sheet lined with parchment paper.
  6. Optionally, refrigerate the patties for 15-30 minutes to help them firm up.
  7. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  8. Carefully place the patties in the skillet, ensuring not to overcrowd the pan.
  9. Cook the patties for about 4-5 minutes on one side until golden brown, then flip and cook for another 4-5 minutes on the other side until fully cooked (internal temperature should reach 165°F or 75°C).
  10. Transfer the cooked patties to a plate lined with paper towels to absorb excess oil.
  11. Arrange the cooked patties on a serving platter.
  12. Top each patty with a spoonful of diced tomatoes and diced red onion.
  13. Sprinkle crumbled feta cheese over the top.
  14. Serve with tzatziki sauce and fresh lemon wedges.
