- 1 pound ground chicken
- 1/2 cup breadcrumbs (preferably whole wheat)
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped fresh parsley
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 2 tablespoons olive oil (for cooking)
- 1/2 cup diced tomatoes (fresh or canned)
- 1/4 cup diced red onion
- 1/4 cup crumbled feta cheese
- 1/4 cup tzatziki sauce (for serving)
- Fresh lemon wedges (for serving)
Instructions
- In a large mixing bowl, combine the ground chicken, breadcrumbs, and grated Parmesan cheese.
- Add the finely chopped parsley, minced garlic, dried oregano, ground cumin, salt, and black pepper to the bowl.
- Crack the large egg into the mixture and mix all the ingredients together until well combined, being careful not to overmix.
- Take a portion of the mixture (about 1/4 cup) and form it into a patty shape, about 1/2 inch thick. Aim to make around 8 patties.
- Place the shaped patties on a plate or a baking sheet lined with parchment paper.
- Optionally, refrigerate the patties for 15-30 minutes to help them firm up.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Carefully place the patties in the skillet, ensuring not to overcrowd the pan.
- Cook the patties for about 4-5 minutes on one side until golden brown, then flip and cook for another 4-5 minutes on the other side until fully cooked (internal temperature should reach 165°F or 75°C).
- Transfer the cooked patties to a plate lined with paper towels to absorb excess oil.
- Arrange the cooked patties on a serving platter.
- Top each patty with a spoonful of diced tomatoes and diced red onion.
- Sprinkle crumbled feta cheese over the top.
- Serve with tzatziki sauce and fresh lemon wedges.
