- 1/2 pound ground pork
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1 package refrigerated biscuit dough (about 8 biscuits)
- Olive oil for greasing
- Extra parsley for garnish (optional)
Instructions
- In a large mixing bowl, combine the ground beef and ground pork.
- Add the breadcrumbs, grated Parmesan cheese, chopped parsley, egg, minced garlic, dried oregano, salt, and black pepper to the bowl.
- Using your hands, mix everything together until just combined. Be careful not to overmix.
- Form the mixture into small meatballs, about 1 inch in diameter (you should get around 20-24 meatballs).
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or aluminum foil.
- Place the meatballs on the prepared baking sheet, spaced out evenly.
- Bake for about 20 minutes, or until cooked through and browned.
- Remove from the oven and let cool slightly.
- Open the package of refrigerated biscuit dough.
- Flatten each biscuit to about 1/4 inch thick.
- Grease a muffin tin with olive oil or non-stick spray.
- Press each flattened biscuit into the muffin tin to create cups.
- Preheat your oven to 375°F (190°C).
- Spoon a small amount of marinara sauce into the bottom of each biscuit cup.
- Place one meatball into each biscuit cup.
- Top each meatball with another spoonful of marinara sauce.
- Sprinkle a generous amount of shredded mozzarella cheese on top.
- Bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
- Let cool slightly before serving. Garnish with extra parsley if desired.
