- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup white chocolate chips (optional)
- 1/2 cup chopped nuts (like macadamia or walnuts, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, matcha powder, baking soda, and salt until well combined.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer on medium speed for 2-3 minutes until light and fluffy.
- Add the egg and vanilla extract to the butter mixture, mixing until fully incorporated.
- Gradually add the dry ingredients to the wet mixture in three parts, mixing on low speed until just combined.
- If desired, fold in the white chocolate chips and/or chopped nuts.
- Cover the bowl with plastic wrap and refrigerate the dough for about 30 minutes.
- Line a baking sheet with parchment paper.
- Scoop out portions of the dough and roll them into balls, placing them about 2 inches apart on the prepared baking sheet. Slightly flatten the tops for even baking.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look underbaked but will continue to cook on the baking sheet.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
- Store cooled cookies in an airtight container at room temperature for up to a week.
