Description
A refreshing Mango Soju Cocktail with sweet mango puree, Korean rice liquor, lime, and fizz. Perfect for summer!
Ingredients

- 2 ripe mangoes, peeled and cubed
- 4 oz Soju (Korean rice liquor)
- 2 oz Lime juice, freshly squeezed
- 1 oz Simple syrup (equal parts sugar and water, heated until sugar dissolves)
- 4 oz Club soda or sparkling water
- Mango slices, for garnish
- Lime wedges, for garnish
- Ice cubes
- Optional: A pinch of chili powder for a spicy kick
Instructions
- Prepare Mango Puree: Peel and cube mangoes. Blend until smooth, adding a tablespoon or two of water or Soju if needed to thin it out slightly. Strain through a fine-mesh sieve for an extra smooth puree (optional).
- Mix Cocktail: Fill a cocktail shaker with ice. Add mango puree, Soju, lime juice, and simple syrup. Shake vigorously for 15-20 seconds.
- Taste and Adjust: Taste the cocktail and adjust sweetness with more simple syrup or tartness with more lime juice. Add a pinch of chili powder for a spicy kick (optional).
- Serve: Prepare cocktail glasses (chilling them is optional). Strain the cocktail into the glasses. Top with club soda or sparkling water.
- Garnish: Garnish with a slice of fresh mango and a lime wedge.
- Serve Immediately: Enjoy cold and fresh.
Notes
- Use ripe mangoes for the best flavor.
- Adjust simple syrup to taste based on the sweetness of the mangoes.
- Experiment with different Soju flavors (grapefruit, green apple).
- For a spicy kick, add a thin slice of jalapeño to the shaker or rim the glass with chili salt.
- To make a mocktail, omit the Soju and replace it with more club soda or sparkling water.
- For a Mango Soju Slushie, blend all ingredients with a cup of ice.
- Infuse the Soju with mango slices for a few days for a more intense mango flavor.
- Lime juice can be substituted with lemon juice.
- Frozen mango chunks can be used if fresh mangoes are not available. Thaw slightly before blending.
