Instructions

  1. Start by selecting fresh scallops. Preferably, use dry-packed scallops for better texture and flavor.
  2. Rinse the scallops under cold water to remove any sand or grit. Pat them dry with paper towels to ensure proper searing.
  3. Season the scallops generously with salt and black pepper on both sides.
  4. Mince the garlic cloves finely to release maximum flavor into the sauce.
  5. Zest the lemon carefully, then juice it, removing any seeds.
  6. In a large skillet, heat the olive oil over medium-high heat until hot but not smoking.
  7. Place the scallops in the hot skillet without overcrowding. Sear for 2-3 minutes until golden brown.
