Refreshing Italian Cream Soda with rich cream, flavored syrup, and bubbly club soda. Customizable and perfect for a sweet treat!

- 1 cup heavy cream
- 2 tablespoons simple syrup (equal parts sugar and water, heated until sugar dissolves)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 12 ounces club soda, chilled
- 2–3 tablespoons Flavored syrup of your choice (such as raspberry, strawberry, vanilla, or almond)
- Whipped cream, for topping (optional)
- Maraschino cherries, for garnish (optional)
- Ice cubes
Instructions
- Chill the heavy cream: Make sure your heavy cream is very cold.
- Combine ingredients: In a small bowl, whisk together the heavy cream, simple syrup, vanilla extract, and almond extract (if using).
- Whisk until thickened: Whisk the mixture vigorously until it thickens slightly and coats the back of a spoon (2-3 minutes). You can use an electric mixer on low speed, but be careful not to overwhip it.
- (Optional) Refrigerate: For best results, cover and refrigerate the cream mixture for at least 30 minutes.
- Fill the glass with ice: Fill a tall glass (12-16 ounces) with ice cubes.
- Add flavored syrup: Pour 2-3 tablespoons of your chosen flavored syrup over the ice.
- Pour in club soda: Slowly pour the chilled club soda over the ice and syrup, leaving about 1-2 inches of space at the top of the glass.
- Add the cream mixture: Gently pour the prepared cream mixture over the club soda.
- Stir gently: Using a long spoon or straw, gently stir the Italian Cream Soda to combine the cream mixture with the soda and syrup.
- Top with whipped cream (optional): If desired, top with a dollop of whipped cream.
- Garnish (optional): Garnish with a maraschino cherry or other desired garnish.
- Serve immediately: Enjoy!

- For a dairy-free version, use coconut cream or almond milk creamer instead of heavy cream.

- If the soda is too sweet, reduce the amount of flavored syrup. If it’s not sweet enough, add more.
- If the cream mixture is too thick, add a little milk or cream. If it’s too thin, whisk longer or add a small amount of powdered sugar.
