Instructions
- Preheat your oven to 425°F (220°C).
- Peel the sweet potatoes and cut them into 1-inch cubes.
- Line a large baking sheet with parchment paper or lightly grease it.
- In a large mixing bowl, mix olive oil, honey, cinnamon, salt, and black pepper. Add chopped rosemary and balsamic vinegar if using.
- Whisk until the mixture is smooth and well combined.
- Place the cubed sweet potatoes into the bowl with the honey mixture.
