Ingredients
Scale
- 4 (6-ounce) salmon fillets, skin on or off
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup fresh pineapple chunks
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 clove garlic, minced
- 1/2 teaspoon ginger, grated
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons chopped green onions, for garnish
- 1 tablespoon sesame seeds, for garnish (optional)
Instructions
- In a medium bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using).
- Gently fold in the fresh pineapple chunks.
- Let it sit for about 15-20 minutes for flavors to meld (optional).
- Pat the salmon fillets dry with paper towels.
- Sprinkle the salmon fillets with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Place the salmon fillets in the hot skillet, skin-side down (if using skin-on fillets). Sear for about 4-5 minutes, or until the skin is crispy and golden brown. If you’re using skinless fillets, sear for about 3-4 minutes per side.
- Carefully flip the salmon fillets and cook for another 2-3 minutes, or until the salmon is almost cooked through. The internal temperature should reach 145°F (63°C).
- Pour the honey pineapple glaze over the salmon fillets. Reduce the heat to medium-low and let the salmon simmer in the glaze for about 3-4 minutes, or until the glaze has thickened slightly and the salmon is cooked through. Baste the salmon with the glaze occasionally.
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Place the salmon fillets on the prepared baking sheet.
- Brush the salmon fillets with the honey pineapple glaze.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- For a more caramelized glaze, broil the salmon for the last 1-2 minutes, watching carefully to prevent burning (optional).
- Remove from heat.
- Sprinkle the salmon with chopped green onions and sesame seeds (if using).
- Serve immediately.
Notes
- Use fresh pineapple for the best flavor.
- Don’t overcook the salmon. Cook until it flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Adjust the sweetness of the glaze by reducing the amount of honey.
- Add a pinch of red pepper flakes to the glaze for some heat.
- The honey pineapple glaze can be prepared ahead of time and stored in the refrigerator for up to 2 days.
- Leftover salmon can be stored in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
- Serve with rice, quinoa, roasted vegetables, salad, or mashed potatoes.
