  • 4 medium-sized potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup frozen peas (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Peel and dice the potatoes into 1-inch cubes and place them in a bowl of cold water to prevent browning. Finely chop the onion and mince the garlic.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute.
  3. Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes, stirring occasionally. Drain any excess fat from the skillet.
  4. Return the skillet to heat and add Worcestershire sauce, dried thyme, paprika, salt, and pepper. Stir to combine. Pour in the beef broth and bring to a simmer.
  5. Drain the diced potatoes and add them to the skillet, stirring to combine. Cover with a lid and reduce heat to low. Cook for 20-25 minutes, stirring occasionally, until the potatoes are tender.
  6. If using frozen peas, add them during the last 5 minutes of cooking.
  7. Taste and adjust seasoning if necessary. For a thicker consistency, simmer uncovered for an additional 5-10 minutes. Remove from heat and garnish with fresh parsley if desired. Serve hot, with crusty bread if you like.
