- 1 pound ground beef
- 4 medium-sized potatoes, peeled and diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup frozen peas (optional)
- Fresh parsley for garnish (optional)
Instructions
- Peel and dice the potatoes into 1-inch cubes and place them in a bowl of cold water to prevent browning. Finely chop the onion and mince the garlic.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute.
- Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes, stirring occasionally. Drain any excess fat from the skillet.
- Return the skillet to heat and add Worcestershire sauce, dried thyme, paprika, salt, and pepper. Stir to combine. Pour in the beef broth and bring to a simmer.
- Drain the diced potatoes and add them to the skillet, stirring to combine. Cover with a lid and reduce heat to low. Cook for 20-25 minutes, stirring occasionally, until the potatoes are tender.
- If using frozen peas, add them during the last 5 minutes of cooking.
- Taste and adjust seasoning if necessary. For a thicker consistency, simmer uncovered for an additional 5-10 minutes. Remove from heat and garnish with fresh parsley if desired. Serve hot, with crusty bread if you like.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- To reheat, microwave for 1-2 minutes or warm on the stovetop with a splash of beef broth if needed.
