- ½ cup unsalted butter, melted
- 1 cup heavy whipping cream
- 1 cup sweetened condensed milk
- ½ cup crème de menthe liqueur
- ½ cup crème de cacao liqueur
- 1 teaspoon vanilla extract
- 1 envelope unflavored gelatin (about 2 ½ teaspoons)
- ¼ cup cold water
- Green food coloring (optional, for color)
- Chocolate shavings or mint leaves for garnish
Instructions
- In a medium mixing bowl, combine the chocolate cookie crumbs and melted butter. Stir until the crumbs are evenly coated and the mixture resembles wet sand.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Make sure its packed tightly to hold its shape when sliced.
- Place the crust in the refrigerator to chill while preparing the filling.
- In a small bowl, sprinkle the unflavored gelatin over the cold water. Let it sit for about 5 minutes to bloom.
- In a large mixing bowl, combine the heavy whipping cream, sweetened condensed milk, crème de menthe, crème de cacao, and vanilla extract. Add a few drops of green food coloring if desired.
- Using an electric mixer, beat the mixture on medium speed until it thickens and soft peaks form (about 3-5 minutes).
- Once the gelatin has bloomed, heat it gently in the microwave for about 10-15 seconds until fully dissolved.
- Slowly drizzle the dissolved gelatin into the whipped cream mixture while continuing to beat on low speed.
- Take the chilled chocolate cookie crust out of the refrigerator. Spoon the mint filling into the crust, spreading it evenly with a spatula.
- Smooth the top with the spatula, creating swirls or peaks if desired.
- Cover the pie with plastic wrap or aluminum foil and return it to the refrigerator. Chill for at least 4 hours, or overnight.
- Remove the pie from the refrigerator and take off the cover. Garnish with chocolate shavings or fresh mint leaves if desired.
- Using a sharp knife, slice the pie into wedges (dipping the knife in warm water helps for clean slices).
- Serve each slice on a plate, optionally adding a dollop of whipped cream on top.
- Cover the pie with plastic wrap or aluminum foil to keep it fresh.
