  • 1 ½ cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 1 cup heavy whipping cream
  • 1 cup sweetened condensed milk
  • ½ cup crème de menthe liqueur
  • ½ cup crème de cacao liqueur
  • 1 teaspoon vanilla extract
  • 1 envelope unflavored gelatin (about 2 ½ teaspoons)
  • ¼ cup cold water
  • Green food coloring (optional, for color)
  • Chocolate shavings or mint leaves for garnish

Instructions

  1. In a medium mixing bowl, combine the chocolate cookie crumbs and melted butter. Stir until the crumbs are evenly coated and the mixture resembles wet sand.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Make sure it’s packed tightly to hold its shape when sliced.
  3. Place the crust in the refrigerator to chill while preparing the filling.
  4. In a small bowl, sprinkle the unflavored gelatin over the cold water. Let it sit for about 5 minutes to bloom.
  5. In a large mixing bowl, combine the heavy whipping cream, sweetened condensed milk, crème de menthe, crème de cacao, and vanilla extract. Add a few drops of green food coloring if desired.
  6. Using an electric mixer, beat the mixture on medium speed until it thickens and soft peaks form (about 3-5 minutes).
  7. Once the gelatin has bloomed, heat it gently in the microwave for about 10-15 seconds until fully dissolved.
  8. Slowly drizzle the dissolved gelatin into the whipped cream mixture while continuing to beat on low speed.
  9. Take the chilled chocolate cookie crust out of the refrigerator. Spoon the mint filling into the crust, spreading it evenly with a spatula.
  10. Smooth the top with the spatula, creating swirls or peaks if desired.
  11. Cover the pie with plastic wrap or aluminum foil and return it to the refrigerator. Chill for at least 4 hours, or overnight.
  12. Remove the pie from the refrigerator and take off the cover. Garnish with chocolate shavings or fresh mint leaves if desired.
  13. Using a sharp knife, slice the pie into wedges (dipping the knife in warm water helps for clean slices).
  14. Serve each slice on a plate, optionally adding a dollop of whipped cream on top.
  15. Cover the pie with plastic wrap or aluminum foil to keep it fresh.
