  • Yield: 4-6 servings 1x

Description

Garlic Herb Grilled Potatoes are a flavorful side dish made with tender baby potatoes marinated in garlic, fresh herbs, and lemon juice, then grilled to achieve a crispy exterior and soft interior. Perfect for pairing with grilled meats or enjoyed on their own.

Ingredients

Scale
  • 2 pounds baby potatoes (or small red potatoes)
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Juice of 1 lemon

Instructions

  1. Wash the Potatoes: Rinse the baby potatoes under cold water to remove any dirt, scrubbing gently with a vegetable brush if needed.
  2. Cut the Potatoes: Leave them whole or cut in half/quarters for larger potatoes to ensure uniform cooking.
  3. Boil the Potatoes: In a large pot, add water and a pinch of salt. Bring to a boil, then add the potatoes. Boil for 10-15 minutes until fork-tender but not mushy.
  4. Drain and Cool: Drain the potatoes in a colander and let them cool for a few minutes.
  5. Combine Ingredients: In a large mixing bowl, mix olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice.
  6. Mix Well: Whisk or fork to combine until the olive oil is fully incorporated with the herbs and garlic.
  7. Add Potatoes to Marinade: Add the cooled potatoes to the marinade bowl.
  8. Toss to Coat: Gently toss the potatoes in the marinade until evenly coated.
  9. Let Them Marinate: Cover and let marinate for at least 30 minutes, or refrigerate for a few hours for enhanced flavor.
  10. Preheat the Grill: Preheat your grill to medium-high heat.
  11. Prepare the Grill Basket: Use a grill basket or skewers for easier grilling of small items.
  12. Grill the Potatoes: Place marinated potatoes in the grill basket or directly on the grill.
  13. Cook Until Golden: Grill for 15-20 minutes, turning occasionally until golden-brown and crispy on the outside.
  14. Remove from Grill: Carefully remove grilled potatoes and place in a serving bowl.
  15. Garnish: Sprinkle with chopped parsley and drizzle with extra olive oil or lemon juice if desired.
  16. Serve Warm: Best served warm as a side dish or standalone vegetarian option.
  17. Enjoy: Dig in and savor the flavors!

Notes

  • For added flavor, consider letting the potatoes marinate overnight.
  • These potatoes pair well with grilled meats, fish, or can be enjoyed on their own.
