- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup sliced black olives (optional)
- 1/2 cup sour cream (for serving)
- 1/4 cup sliced jalapeños (optional)
Instructions
- In a large skillet, heat a tablespoon of olive oil over medium heat. Once the oil is hot, add the ground beef. Use a wooden spoon to break it apart as it cooks.
- Cook the meat until its browned and no longer pink, about 5-7 minutes. Stir occasionally to ensure even cooking.
- Drain any excess fat from the skillet to keep the dish from becoming too greasy.
- Add the taco seasoning to the meat, usually adding about 2/3 cup of water as per packet instructions. Stir well to combine.
- Add the can of chili and the can of diced tomatoes with green chilies to the skillet. Stir everything together until well mixed.
- Let the mixture simmer for about 10 minutes on low heat to meld the flavors.
- While the meat mixture simmers, prepare your toppings. Shred the lettuce and dice the tomatoes.
- If using black olives, slice them into rings. Chop fresh jalapeños if desired.
- Grate the cheddar cheese if using a block for better melting and flavor.
- Preheat your oven to 350°F (175°C).
- In a large baking dish, spread a layer of Fritos corn chips at the bottom, covering the entire base.
- Spoon the meat mixture evenly over the Fritos, spreading it gently with a spatula.
- Sprinkle a generous layer of shredded cheddar cheese over the meat mixture.
- Bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and slightly golden.
