  • 1 packet of taco seasoning (about 1 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup sour cream (for serving)
  • 1/4 cup sliced jalapeños (optional)

Instructions

  1. In a large skillet, heat a tablespoon of olive oil over medium heat. Once the oil is hot, add the ground beef. Use a wooden spoon to break it apart as it cooks.
  2. Cook the meat until it’s browned and no longer pink, about 5-7 minutes. Stir occasionally to ensure even cooking.
  3. Drain any excess fat from the skillet to keep the dish from becoming too greasy.
  4. Add the taco seasoning to the meat, usually adding about 2/3 cup of water as per packet instructions. Stir well to combine.
  5. Add the can of chili and the can of diced tomatoes with green chilies to the skillet. Stir everything together until well mixed.
  6. Let the mixture simmer for about 10 minutes on low heat to meld the flavors.
  7. While the meat mixture simmers, prepare your toppings. Shred the lettuce and dice the tomatoes.
  8. If using black olives, slice them into rings. Chop fresh jalapeños if desired.
  9. Grate the cheddar cheese if using a block for better melting and flavor.
  10. Preheat your oven to 350°F (175°C).
  11. In a large baking dish, spread a layer of Fritos corn chips at the bottom, covering the entire base.
  12. Spoon the meat mixture evenly over the Fritos, spreading it gently with a spatula.
  13. Sprinkle a generous layer of shredded cheddar cheese over the meat mixture.
  14. Bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and slightly golden.
