- 1 package (14 oz) udon noodles
- 1 cup shiitake mushrooms, sliced
- 1 cup bok choy, chopped
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 green onions, chopped (for garnish)
- Salt and pepper to taste

- In a medium bowl, combine the soy sauce, mirin, and sesame oil. Whisk until well blended.
- Add the thinly sliced beef sirloin to the marinade, ensuring each piece is well coated. Cover with plastic wrap and let marinate in the refrigerator for at least 30 minutes (or longer for enhanced flavor).
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and grated ginger, stirring for about 1 minute until fragrant.
- Pour in the beef broth and water, bringing the mixture to a gentle boil.
- Reduce heat to low and let simmer for 10 minutes to meld flavors.
- In a separate skillet, heat more vegetable oil over medium-high heat. Add the marinated beef (discard any leftover marinade) and cook for 3-4 minutes, stirring frequently, until browned and cooked through.
- Add the sliced shiitake mushrooms and cook for an additional 2-3 minutes until tender.
- Stir in the chopped bok choy and cook for another 2 minutes until wilted. Season with salt and pepper to taste.
- In a separate pot, bring water to a boil. Add the udon noodles and cook according to package instructions (3-4 minutes for fresh, 8-10 minutes for frozen).
- Drain the noodles and rinse under cold water to stop the cooking process. Set aside.
- Once the broth has simmered for 10 minutes, add the cooked beef and vegetable mixture to the pot. Stir to combine.
- Add the cooked udon noodles to the broth and gently stir, allowing the noodles to soak up the flavors.
- Let the mixture simmer for an additional 2-3 minutes to heat through.
- Allow the udon mixture to cool completely before transferring to freezer-safe containers.
