- 8 large eggs
- 1 cup whole milk
- 1 cup shredded cheddar cheese
- 1 cup cooked bacon, chopped
- 1/2 cup diced onion
- 1/2 cup diced bell pepper (any color)

- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 tablespoon olive oil or butter
- Fresh herbs for garnish (optional, such as parsley or chives)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes. Remove and drain on paper towels, then chop into bite-sized pieces.
- In the same skillet, leave about 1 tablespoon of bacon grease (or use olive oil or butter). Sauté the diced onion and bell pepper for 5-7 minutes until soft and translucent.
- In a large mixing bowl, crack the eggs and add the whole milk, salt, black pepper, and garlic powder. Whisk until well combined and slightly frothy.
- Once the vegetables are cooked, remove the skillet from heat. Add the chopped bacon and shredded cheddar cheese to the skillet with the sautéed vegetables and stir to combine.
- Pour the egg mixture over the bacon and vegetable mixture in the skillet. Gently stir to ensure even distribution.
- If using an oven-safe skillet, transfer it directly to the oven. If not, pour the mixture into a greased 9×13-inch baking dish.
- Spread the mixture evenly in the dish for uniform cooking.
- Bake in the preheated oven for 25-30 minutes, or until the frittata is set in the center and lightly golden on top. Check for doneness by inserting a knife into the center; it should come out clean.
- Remove from the oven and let cool for 5-10 minutes before slicing.
- Cut the frittata into wedges or squares and transfer to a serving platter. Garnish with fresh herbs if desired.
- Serve warm or at room temperature, paired with a side salad or crusty bread.
