  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup dry white wine (like Sauvignon Blanc)
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt for every 4 quarts of water).
  2. Add the linguine or spaghetti and cook according to package instructions until al dente (8-10 minutes). Stir occasionally to prevent sticking.
  3. Reserve about 1 cup of the pasta cooking water, then drain the pasta in a colander and set aside.
  4. In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat.
  5. Once the butter has melted and the oil is shimmering, add the minced garlic and red pepper flakes. Sauté for 1-2 minutes until fragrant but not browned.
  6. Add the shrimp in a single layer, season with salt and pepper, and cook for 2-3 minutes until pink and opaque. Flip and cook for another 1-2 minutes. Remove shrimp and set aside.
  7. In the same skillet, pour in the white wine and lemon juice, scraping up any browned bits from the pan.
  8. Bring to a simmer and cook for 3-4 minutes to reduce the wine slightly.
  9. Return the shrimp to the skillet, add the remaining 2 tablespoons of butter, and stir until melted. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
  10. Add the drained pasta to the skillet with the shrimp and sauce. Toss gently to coat.
  11. Stir in the chopped parsley and adjust seasoning with salt, pepper, or lemon juice as needed.
  12. Optionally, sprinkle with grated Parmesan cheese for added creaminess.
  13. Serve immediately in shallow bowls, garnished with additional parsley and a lemon wedge.
  14. Enjoy with crusty bread or a simple green salad.

Notes

  • For added vegetables, consider tossing in cherry tomatoes or spinach during the last few minutes of cooking the shrimp.
