- 1 cup sour cream
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil

- Fresh parsley, chopped (for garnish)
Instructions
- Gather all your ingredients to make the cooking process smoother.
- Chop the onion finely and mince the garlic. Slice fresh mushrooms or drain canned mushrooms.
- Measure out the beef broth, Worcestershire sauce, Dijon mustard, and sour cream.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
- Add minced garlic and cook for an additional minute, stirring frequently.
- Increase heat to medium-high and add ground beef. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.
- Add sliced mushrooms to the skillet and cook for about 5 minutes until tender.
- Sprinkle flour over the mixture and stir well to combine.
- Pour in beef broth, Worcestershire sauce, and Dijon mustard. Stir and scrape the bottom of the skillet to incorporate browned bits.
- Bring to a gentle simmer and cook for 5-7 minutes until the sauce thickens slightly. Add more beef broth if it gets too thick.
- Reduce heat to low and stir in sour cream until fully incorporated. Avoid boiling to prevent curdling.
- Season with salt and pepper to taste.
- In a separate pot, bring salted water to a boil. Cook egg noodles according to package instructions until al dente, about 7-9 minutes.
- Drain noodles and return to the pot. Toss with a little olive oil if desired.
- To serve, mix noodles into the sauce or plate noodles first and spoon stroganoff over the top. Garnish with chopped parsley.
- Serve hot with crusty bread or a simple green salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
