  • Author: Dottie
  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Description

This ground beef stroganoff is a quick and comforting dish featuring tender beef and mushrooms in a creamy sauce, served over egg noodles. Perfect for busy weeknights, it’s a family favorite that’s easy to prepare and full of flavor.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced (fresh or canned)
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 8 ounces egg noodles (or pasta of your choice)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Gather all your ingredients to make the cooking process smoother.
  2. Chop the onion finely and mince the garlic. Slice fresh mushrooms or drain canned mushrooms.
  3. Measure out the beef broth, Worcestershire sauce, Dijon mustard, and sour cream.
  4. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
  5. Add minced garlic and cook for an additional minute, stirring frequently.
  6. Increase heat to medium-high and add ground beef. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.
  7. Add sliced mushrooms to the skillet and cook for about 5 minutes until tender.
  8. Sprinkle flour over the mixture and stir well to combine.
  9. Pour in beef broth, Worcestershire sauce, and Dijon mustard. Stir and scrape the bottom of the skillet to incorporate browned bits.
  10. Bring to a gentle simmer and cook for 5-7 minutes until the sauce thickens slightly. Add more beef broth if it gets too thick.
  11. Reduce heat to low and stir in sour cream until fully incorporated. Avoid boiling to prevent curdling.
  12. Season with salt and pepper to taste.
  13. In a separate pot, bring salted water to a boil. Cook egg noodles according to package instructions until al dente, about 7-9 minutes.
  14. Drain noodles and return to the pot. Toss with a little olive oil if desired.
  15. To serve, mix noodles into the sauce or plate noodles first and spoon stroganoff over the top. Garnish with chopped parsley.
  16. Serve hot with crusty bread or a simple green salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.

Notes

  • Adjust seasoning to your taste.
  • For a lighter version, you can substitute ground beef with ground turkey or chicken.
