  • 2 cups green beans, trimmed and cut into 1-inch pieces (fresh or frozen)
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Gather all your ingredients for easy access.
  2. Slice the Polish sausage into 1-inch pieces.
  3. Peel and dice the potatoes into bite-sized pieces.
  4. Slice the carrots into rounds or half-moons.
  5. Chop the onion and bell pepper into desired sizes.
  6. Trim and cut fresh green beans into 1-inch pieces (skip if using frozen).
  7. Mince the garlic.
  8. In the crockpot, layer the diced potatoes at the bottom.
  9. Add the sliced carrots on top of the potatoes.
  10. Spread the chopped onion and bell pepper evenly over the vegetables.
  11. Add the green beans next.
  12. Sprinkle the minced garlic over the vegetables.
  13. Distribute the sliced Polish sausage evenly over the top.
  14. Pour the can of diced tomatoes over everything, including the juice.
  15. In a separate bowl, mix together the chicken broth, Worcestershire sauce, dried thyme, paprika, salt, and pepper. Stir well.
  16. Pour this mixture over the ingredients in the crockpot, ensuring everything is well coated.
  17. Cover the crockpot with its lid. Cook on low for 6-8 hours or on high for 3-4 hours.
  18. About halfway through, gently stir the mixture to ensure even cooking.
  19. Check the potatoes and carrots for doneness; they should be tender but not mushy. Cook longer if needed.
  20. Once cooked, taste and adjust seasoning if necessary.
  21. Chop fresh parsley and sprinkle over the top before serving.
  22. Serve hot, either on its own or with crusty bread.
