  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup BBQ sauce (your choice of flavor)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • Buns for serving
  • Coleslaw (optional, for topping)

Instructions

  1. Trim any excess fat from the beef chuck roast to reduce greasiness.
  2. Season the roast generously with salt, black pepper, smoked paprika, onion powder, garlic powder, and cayenne pepper (if using). Rub the spices into the meat for maximum flavor.
  3. In a large skillet, heat the olive oil over medium-high heat. Sear the beef roast on all sides until browned, about 3-4 minutes per side. Remove the roast and set aside.
  4. In the same skillet, add the sliced onions and sauté for about 5 minutes until soft and translucent.
  5. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently.
  6. Pour in the beef broth, scraping the bottom of the skillet to deglaze.
  7. Stir in the BBQ sauce, Worcestershire sauce, apple cider vinegar, and brown sugar until well combined.
  8. Transfer the seared beef roast to the crockpot and pour the sauce mixture over it.
  9. Cover and set the crockpot to low heat. Cook for 8-10 hours, or until the beef is tender and easily shreds with a fork. For a quicker option, set to high heat for 4-5 hours.
  10. About 30 minutes before cooking time is up, check the beef for tenderness.
  11. Use two forks to shred the beef directly in the crockpot, mixing it with the sauce.
  12. For a thicker sauce, remove the lid and cook on high for an additional 15-30 minutes.
  13. Taste and adjust seasoning if necessary.
  14. Prepare your buns by toasting them lightly if desired.
  15. Pile a generous amount of pulled beef onto the bottom half of each bun.
  16. Top with coleslaw if desired.
  17. Place the top half of the bun on the sandwich and press down gently.
