Instructions

  1. Cut the salmon fillet into sticks, aiming for about 1-inch wide and 3-4 inches long. Season with salt and pepper and let sit for 10 minutes.
  2. Prepare three shallow bowls: In the first bowl, add flour mixed with garlic powder, onion powder, and smoked paprika. In the second bowl, whisk the eggs until well combined. In the third bowl, pour in the breadcrumbs.
  3. Use one hand for dry ingredients and the other for wet to keep things tidy. Dip each salmon stick into the flour, then the egg mixture, and finally roll in the breadcrumbs, pressing gently to adhere.
  4. In a large skillet, heat enough vegetable oil to cover the bottom of the pan (about 1/4 inch deep) over medium-high heat. Test the oil by dropping in a small piece of bread; if it sizzles, it’s ready. Carefully place the breaded salmon sticks in the skillet, cooking in batches to avoid overcrowding. Fry for 3-4 minutes on each side until golden brown and crispy. Use tongs to flip gently and transfer cooked sticks to a plate lined with paper towels to drain excess oil.
