  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
  3. Season both sides of the chicken breasts with salt and pepper.
  4. Set up three shallow dishes:
    • In the first dish, mix flour with garlic powder, onion powder, paprika, and a pinch of salt and pepper.
    • In the second dish, whisk the eggs.
    • In the third dish, combine breadcrumbs and grated Parmesan cheese.
  5. Coat each chicken breast in the flour mixture, dip in the egg mixture, and then coat in the breadcrumb mixture, pressing gently to adhere.
  6. In a large oven-safe skillet, heat olive oil over medium-high heat until hot.
  7. Add the breaded chicken breasts to the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
  8. Move the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
  9. In a small saucepan, combine lemon juice, lemon zest, and a pinch of salt. Heat over low heat until warmed through.
