  • 1 cup diced ham (smoked or cooked)

  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 1 cup frozen corn (or fresh if in season)
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • Optional: chopped green onions or chives for garnish

Instructions

  1. Peel and dice the potatoes into small cubes, about 1-inch in size.
  2. Chop the onion finely.
  3. Mince the garlic cloves.
  4. Dice the ham into bite-sized pieces.
  5. Measure out the chicken broth, heavy cream, and milk, and set aside.
  6. In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  7. Add the minced garlic and sauté for an additional minute, being careful not to burn it.
  8. Add the diced potatoes and ham to the pot, stirring to combine.
  9. Pour in the chicken broth, ensuring the potatoes are submerged. Bring to a boil over high heat.
  10. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes, or until the potatoes are tender.
  11. Add the frozen corn (or fresh corn) and stir to combine.
  12. Pour in the heavy cream and milk, stirring gently to incorporate.
  13. Add the dried thyme and parsley, and season with salt and pepper to taste. Adjust seasoning as needed.
  14. Allow to simmer for an additional 5-10 minutes, stirring occasionally.
  15. Taste the chowder and adjust seasoning if necessary.
  16. For a thicker chowder, mash some of the potatoes in the pot.
  17. Ladle the chowder into bowls and garnish with chopped green onions or chives if desired.
  18. Serve hot with crusty bread or crackers on the side.
