Instructions

  1. Season the chicken breasts with salt, pepper, and a sprinkle of dried thyme and oregano.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts to the skillet.
  3. Cook the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.
  4. Remove the chicken from the skillet and let it rest on a cutting board for about 5 minutes.
  5. In the same skillet, add the diced onion and sauté for about 3-4 minutes until translucent.
  6. Add the minced garlic and sauté for an additional 1-2 minutes, stirring frequently.
  7. Stir in the orzo pasta, allowing it to toast slightly for about 1-2 minutes.
  8. Pour in the chicken broth, scraping the bottom of the skillet to incorporate any browned bits.
  9. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 10-12 minutes, stirring occasionally.
  10. Once the orzo is cooked, stir in the heavy cream, frozen peas, and grated Parmesan cheese until the cheese is melted and the sauce is creamy.
  11. Slice the rested chicken into bite-sized pieces.
  12. Add the sliced chicken back into the skillet, stirring gently to combine. Heat through for about 2-3 minutes.
  13. Taste and adjust seasoning with more salt, pepper, or herbs if needed.
