Instructions
- In a medium saucepan, combine the water and unsalted butter. Place it over medium heat and bring it to a gentle boil, stirring occasionally.
- Once boiling, remove from heat and add the all-purpose flour and salt all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan (about 1-2 minutes).
- Let the dough cool for about 5 minutes to avoid cooking the eggs.
- Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy. Add vanilla extract with the last egg if desired.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Transfer the choux pastry dough into a piping bag fitted with a large round tip.
- Pipe small mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Dip your finger in water and smooth out any peaks on the tops of the mounds.
- Bake for 20-25 minutes until golden brown and puffed. Avoid opening the oven door during the first 20 minutes.
- Turn off the oven and crack the door open slightly, letting the cream puffs sit for an additional 10 minutes.
