Description
Crispy, low-carb cottage cheese chips are a healthy and delicious snack, perfect for dipping or enjoying on their own.
Ingredients
Scale
- 16 ounces full-fat cottage cheese (small curd preferred)
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika (optional)
- 1/4 teaspoon black pepper
- Pinch of red pepper flakes (optional)
- Olive oil spray
Instructions
- Preheat: Preheat oven to 350°F (175°C).
- Drain Cottage Cheese: Place cottage cheese in a fine-mesh sieve lined with cheesecloth or a clean kitchen towel. Drain for at least 30 minutes (up to an hour), pressing gently to remove excess moisture.
- Combine: In a medium bowl, combine drained cottage cheese, Parmesan cheese, garlic powder, onion powder, smoked paprika (if using), black pepper, and red pepper flakes (if using). Mix well.
- Prepare Baking Sheet: Line a large baking sheet with parchment paper or a silicone baking mat.
- Portion: Drop small mounds (1-2 teaspoons) of cottage cheese mixture onto the baking sheet, spacing them about 1 inch apart.
- Flatten: Gently flatten each mound with the back of a spoon or spatula to about 1/8 inch thickness.
- Spray: Lightly spray the flattened chips with olive oil spray.
- Bake: Bake for 30-45 minutes, or until golden brown and crispy around the edges.
- Cool: Let the chips cool completely on the baking sheet. They will crisp up further as they cool.
- Serve: Serve as a snack with dips or as part of a cheese board.
Notes
- Draining the cottage cheese thoroughly is essential for crispy chips.
- Baking time may vary depending on your oven and the thickness of the chips. Watch closely to prevent burning.
- Store cooled chips in an airtight container at room temperature for 2-3 days. Reheat in a low oven (250°F/120°C) to restore crispness if needed.
- Flavor Variations:
- Everything Bagel Seasoning: Sprinkle before baking.
- Italian Herbs: Add 1 teaspoon dried herbs to the mixture.
- Chili Lime: Add chili powder and lime juice to the mixture.
- Ranch Seasoning: Mix in a packet of ranch seasoning.
- Texture Tips:
- Extra Crispy: Press mixture between parchment paper before baking.
- Thicker Chips: Don’t flatten as much (bake time will increase).
- Troubleshooting:
- Not Crisping: Drain cottage cheese more thoroughly. Bake longer at a lower temperature.
- Burning: Reduce oven temperature. Cover with foil during the last few minutes.
- Sticking: Use parchment paper or a silicone mat. Spray the baking sheet with cooking spray.
