- Pinch of salt
- Chocolate shavings or cocoa powder for garnish (optional)
Instructions
- In a medium saucepan, combine the heavy cream, whole milk, and granulated sugar. Place the saucepan over medium heat and stir gently until the sugar has completely dissolved (about 3-5 minutes). Avoid boiling.
- Add the instant coffee granules and a pinch of salt to the mixture. Stir until the coffee is fully dissolved and the mixture is smooth.
- Remove from heat and stir in the vanilla extract.
- In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes to bloom.
- Return the saucepan to low heat and stir in the bloomed gelatin until completely dissolved (about 2-3 minutes). Do not boil.
- Allow the mixture to cool slightly for about 10 minutes.
- Carefully pour the mixture into individual serving glasses or ramekins, filling each about three-quarters full.
- Cover with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or until set. For a quicker option, chill in the freezer for about 2 hours, monitoring closely.
- While chilling, prepare garnishes like chocolate shavings or cocoa powder. Use a vegetable peeler for chocolate shavings or have cocoa powder ready in a bowl.
- Once set, remove from the refrigerator. If sticking, run a small knife around the edge to release.
- For ramekins, dip the bottom in warm water for a few seconds, then invert onto a plate.
- Add garnishes: dollop whipped cream, sprinkle with chocolate shavings or cocoa powder, and drizzle with caramel or chocolate sauce if desired.
