Creamy, dairy-free Coffee Coconut Cream Freeze! Made with coconut milk, coffee, and maple syrup for a refreshing and delicious frozen treat.

- 1 (13.5 ounce) can full-fat coconut milk, refrigerated overnight
- 1/2 cup strong brewed coffee, cooled
- 1/4 cup maple syrup (or to taste)
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 2 tablespoons unsweetened cocoa powder for a mocha version (Optional)
- Chocolate shavings or toasted coconut flakes for garnish (Optional)
Instructions
- Refrigerate the Coconut Milk: Place the unopened can of full-fat coconut milk in the refrigerator for at least 8 hours, or preferably overnight.
- Scoop Out the Cream: Open the can and carefully scoop out the thick solidified cream from the top, leaving the watery liquid behind. Reserve the coconut water for other uses.
- Brew Strong Coffee: Brew 1/2 cup of strong coffee and let it cool completely.
- Combine Ingredients: In a high-speed blender, combine the scooped-out coconut cream, cooled coffee, maple syrup, vanilla extract, and sea salt (and cocoa powder if making mocha).
- Blend Until Smooth: Blend on high speed until completely smooth and creamy, scraping down the sides as needed.
- Taste and Adjust: Taste and adjust the sweetness by adding more maple syrup if desired.
- Pour into Container: Pour the blended mixture into a freezer-safe container.
- Freeze: Cover tightly and freeze for at least 4 hours, or preferably overnight, until solid but not rock hard.
- Optional: Stir During Freezing: For a creamier texture, stir the mixture every hour or so during the first few hours of freezing.
- Thawing if Necessary: If the freeze becomes too hard to scoop, let it thaw for a few minutes at room temperature before serving.
- Scoop and Serve: Scoop into bowls or cones.
- Garnish (Optional): Garnish with chocolate shavings, toasted coconut flakes, or a drizzle of maple syrup.
- Enjoy Immediately: Serve immediately.
