Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
  4. Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the whole milk. Start with a third of the dry ingredients, mix until just combined, then add half of the milk, and repeat until all ingredients are incorporated.
  6. Use a cookie scoop or two spoons to drop rounded tablespoons of batter onto a parchment-lined baking sheet, leaving about 2 inches of space between each dollop.
  7. Place the baking sheet in the preheated oven and bake for about 10-12 minutes, keeping an eye on them to ensure they are set but still soft in the center.
  8. Remove the baking sheet from the oven and let the cookies cool on the sheet for about 5 minutes.
  9. Carefully transfer the cookies to a wire rack to cool completely.
  10. While the cookies are cooling, prepare the filling by beating the softened butter in a medium bowl until creamy.
  11. Gradually add the powdered sugar, mixing on low speed until fully incorporated.
