  • 1/4 cup fresh cilantro, chopped

  • 8 small corn or flour tortillas
  • 1 cup red cabbage, shredded
  • 1 avocado, sliced
  • 1/2 cup sour cream or Greek yogurt
  • Extra lime wedges, for serving

Instructions

  1. In a large mixing bowl, combine olive oil, minced garlic, ground cumin, chili powder, smoked paprika, lime juice, and chopped cilantro. Season with salt and pepper to taste.
  2. Add the peeled and deveined shrimp to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 15 minutes (up to 1 hour for deeper flavor).
  3. Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer, cooking for 2-3 minutes on one side until pink and opaque.
  4. Flip the shrimp and cook for an additional 1-2 minutes until fully cooked and golden. Remove from skillet and set aside.
  5. Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or wrap in foil and heat in a preheated oven at 350°F (175°C) for 10 minutes.
  6. Assemble the tacos by placing a warm tortilla on a plate, adding 4-5 shrimp, a handful of shredded red cabbage, a few slices of avocado, and a drizzle of sour cream or Greek yogurt.
  7. Top with extra chopped cilantro and serve with lime wedges on the side. Enjoy with tortilla chips and salsa or a fresh salad.
