- 1/4 cup fresh cilantro, chopped
- Salt and pepper, to taste
- 8 small corn or flour tortillas
- 1 cup red cabbage, shredded
- 1 avocado, sliced
- 1/2 cup sour cream or Greek yogurt
- Extra lime wedges, for serving
Instructions
- In a large mixing bowl, combine olive oil, minced garlic, ground cumin, chili powder, smoked paprika, lime juice, and chopped cilantro. Season with salt and pepper to taste.
- Add the peeled and deveined shrimp to the marinade, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 15 minutes (up to 1 hour for deeper flavor).
- Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer, cooking for 2-3 minutes on one side until pink and opaque.
- Flip the shrimp and cook for an additional 1-2 minutes until fully cooked and golden. Remove from skillet and set aside.
- Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or wrap in foil and heat in a preheated oven at 350°F (175°C) for 10 minutes.
- Assemble the tacos by placing a warm tortilla on a plate, adding 4-5 shrimp, a handful of shredded red cabbage, a few slices of avocado, and a drizzle of sour cream or Greek yogurt.
- Top with extra chopped cilantro and serve with lime wedges on the side. Enjoy with tortilla chips and salsa or a fresh salad.
