Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 3 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream (or more for desired consistency)
  • Chocolate shavings (for decoration)
  • Fresh berries (for decoration)
  • Mint leaves (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the wet ingredients: eggs, milk, vegetable oil, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing on medium speed until just combined.
  5. Carefully stir in the boiling water. The batter will be thin.
  6. Divide the batter evenly between the two prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the frosting, beat the softened butter until creamy. Gradually add powdered sugar and cocoa powder, mixing until combined.
  9. Add salt and vanilla extract, then mix again. Pour in heavy cream and beat on high speed until light and fluffy.
  10. Once the cakes are cool, place one layer on a serving plate and spread frosting on top. Add the second layer and frost the top and sides of the cake.
  11. Decorate with chocolate shavings, fresh berries, and mint leaves if desired.
  12. Slice and serve!

Notes

  • Ensure the cakes are completely cool before frosting to prevent melting.
  • Adjust the frosting consistency with more heavy cream if needed.
  • Feel free to add your favorite decorations for a personal touch.
