  • 4 cups milk

  • 1/4 teaspoon nutmeg (optional)
  • 4 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup crushed Ritz crackers
  • 4 tablespoons melted butter

Instructions

  1. Prepare the Chicken: In a large bowl, toss the chicken cubes with olive oil, salt, pepper, garlic powder, and paprika.
  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook until cooked through and lightly browned (7-10 minutes). Set aside.
  3. Cook the Rice: In a medium saucepan, combine the uncooked rice, chicken broth, and salt. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is tender and liquid is absorbed.
  5. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  6. Prepare the Broccoli: Preheat oven to 400°F (200°C). Wash and cut broccoli into florets.
